The sanitary transportation of human and animal food (sanitary transportation rule) implements the Sanitary Food Transportation Act of 2005 (SFTA) and the Food Safety Modernization Act of 2011 (FSMA), and is part of a larger effort to focus on prevention of food safety throughout the food chain.

This manual helps IFDA members better understand the basic requirements of the rule, including how foodservice distributors can build off of their existing sanitary transportation practices to satisfy those requirements.  The manual was prepared by IFDA legal counsel Covington & Burling LLP, with input from the IFDA Food Safety Leadership Committee.
